Pig’s ear crackling, black pudding, and apple crisp in caramel

Starter:

Charcuterie platter: coppa, pate de campagne, pate en croute, jamon, radishes, cornichons

Remoulade of brawn

Poached Rhubarb & Hop Vodka

Main:

Pork loin gammon with madeira glaze with choucroute, pancetta, Toulouse sausage

Potato, leek and apple gratin with cheese
