With the change of the seasons comes a new look and new menu for Michelin starred restaurant Casamia, in keeping with their seasons.casamia concept. For Autumn, Jonray and Peter Sanchez-Inglesias have transformed the Westbury-on-Trym based restaurant, focusing on harvesting, curing their own meats, smoking their own fish and pickling.

Jonray and Peter said: ‘The menu is designed to be warming, moreish and comforting and the ideas for dishes reflect what we enjoyed as children at this time of year. In Autumn there is an amazing abundance of ingredients and flavours to experiment with, especially here in the West Country. It’s very exciting for us as chefs!’

The menu includes dishes such as scrambled duck egg with pheasant and roast hake with porcini and runner beans, finishing with mushroom fudge and ‘fallen’ rose petals.

To enhance this culinary experience further, Casamia has been given a makeover and, with the help of Cathedral Kitchens and Electrolux, a new open service kitchen has been created in the restaurant. Guests can now watch the dishes being created, with the new Chefs’ Table providing an interactive dining experience and the opportunity to communicate directly with Jonray, Peter and their team.

The number of covers has also been reduced within the restaurant to maximise the experience for diners and enhance every detail of service.

In response to popular demand, Casamia is now also opening for lunch during the week from Tuesday to Friday for the first time, offering diners the opportunity to experience the tasting menu at a slightly reduced price.

Jonray & Peter’s collaboration with Electrolux has developed out of their involvement with The Electrolux Cube: an exciting ‘pop-up’ restaurant on top of the Royal Festival Hall in London. The boys took over the kitchen for two weeks in August, serving a Casamia-inspired summer seasonal menu, with a special sound track played to diners accompanying each dish, creating a unique multi-sensual experience.  It was so successful that the brothers have already been invited back to The Cube for a further two weeks in November to offer guests a unique autumn culinary experience.
