Chris Wicks and City of Bristol College cater for the Bristol Good Food Awards
City of Bristol College students will be linking up with Chris Wicks, former owner of Bells Diner, as they create a three-course gourmet meal for over 460 guests at the Bristol Good Food Awards Gala Dinner at the Bristol Marriott on Sunday 30th June.
College students will also be running the front of house, with over 50 hospitality learners providing food and wine service.
Adrian Kirikmaa, Chef and Restaurant Manager at City of Bristol College, comments: “This is an amazing opportunity for our students to showcase their catering and front-of-house skills as they gain industry-related work experience on a large scale. This will be the biggest event they have catered for to date, and I’m sure that they will rise to the challenge.”
Dishes for the evening include Heritage Tomatoes with Timsbury goat’s cheese; rump of lamb cooked with hay, summer vegetables and onion puree; finishing with peaches amoretti and crème fraiche.
Chris Wicks comments: “It’s a real honour to be asked to cook at The Bristol Good Food Awards. For me, this event is about raising the bar in what is expected from the College students as they will have to prepare and serve food in a high-pressured setting.
“The experience allows students to gain some insight into catering for large events, which will broaden their experience and knowledge. Food is my life and passion and it’s great to be able to share this event with the next generation of caterers.”
