Recipe: Ginger & Lime Sauce

Ingredients
1x bunch asparagus
4 pints chicken stock
1x onion roughly chopped
1x bulb garlic cut in ½
1x hand of ginger finely diced
Salt and pepper to season
4x limes
Method
1. Sweat off asparagus, onion, garlic and ginger in butter until brown
2. Once brown add chicken stock and bring to the boil. Simmer and reduce by ¾
3. Strain liquid into a fresh pan, add the juice of the 4 limes and then bring to the boil again. Reduce until a syrup consistency.
