“Drink Wildly Different” is the tagline for the Wild Beer Co, launching in Autumn 2012. Based just outside Bristol, The Wild Beer Co will be producing “a very different breed of beers” – using unusual ingredients, wild yeasts and the sort of imagination and creativity that they hope will “dazzle taste buds and wildly challenge your perceptions of beer” – inspiring people to drink beer differently.
The range of beers will include some that are fermented with wild yeasts, a number that are being barrel-aged as I type, and others that are brewed with various unusual ingredients, all of which will come together to form a range of premium beers in “beautiful packaging that will look great both on the shelf and on a white table cloth in a Michelin restaurant”.
The Wild Beer Co range will be a combination of both ancient techniques and styles and brand new ones, with the brand aiming to target those who do not want mass market beers, but who want to discover new tastes and flavours.
The pair behind the company say that they have already lined up some exciting collaborations with well-known food and drink producers, meaning that they’ll be concocting some unique beers at their “secret Somerset base hidden away down miles of country lanes”.
While they’re still waiting for their brand new stainless steel brew kit to be finished, The Wild Beer Co are busy producing prototype beers on their pilot kit, creating a range of recipes from the more normal to the fairly ambitious. They’re working on the brand design, searching out bottling equipment, writing content for their soon-to-be-launched website, printing t-shirts…and, of course, making sure that they’re tasting the new varieties regularly!
